Ingredients

  • 1/2 cup Frank’s Red Hot sauce

  • 3 tbsp vegan butter/olive oil spread

  • 1 can jackfruit

  • 1 can of corn kernels

  • 1 can of black beans

  • 6 small corn tortillas or 4 medium size

  • 1 red bell pepper cut into small pieces

  • 1/4 cup olive oil

Instructions

  1. Pull apart chunks of jackfruit into pulled-pork-looking shreds

  2. Melt vegan butter/olive oil spread and add to Frank’s Red Hot sauce to make buffalo sauce.

  3. Toss pulled jackfruit in buffalo sauce until well coated.

  4. Place in a pan on medium to low heat until buffalo sauce starts to simmer slightly.

  5. Add corn, black beans, and red pepper pieces.

  6. Stir until everything is heated up and cooked well.

  7. In a deep pot or frying pan, heat up 1/4 cup of oil until hot.

  8. Place a few spoonfuls of jackfruit mix in a thin line in a tortilla and roll up.

  9. Place a rolled tortilla filled with jackfruit mix into hot oil to start frying rolling around constantly (so none of the sides burn).

  10. When tortilla is golden brown, you’ve got a taquito!
